Fried Chicken

Mmmm…fried chicken.  Arguably one of my favorite meals of all time.  Fried chicken, mashed potatoes and gravy, and corn.  Mmmmm…

Fried Chicken

Chicken – I use boneless, skinless chicken breasts.  Use what you like.

Flour – you’ll need about a cup for 3-4 breasts.

2 eggs

Salt

Pepper

Garlic powder/salt

oil

Ingredients.

Pour oil into your frying pan or skillet.  Enough so about 1/4 inch covers the bottom of the pan.  Turn the burner to medium.  On my oven I set it at 5. Let the oil heat while you prepare the chicken.

Rinse the chicken and cut off any veiny or fatty parts that are disturbing.  Beat the eggs in one shallow bowl.  In a second shallow bowl, combine flour, salt, pepper and garlic powder/salt to your liking.  I don’t ever measure, I just shake a bunch in the bowl and call it good.

Egg first then flour.  Then into the frying pan.

Dip the chicken first in the egg, then in the flour mixture.  Place chicken in hot oil to fry.  Cover the pan/skillet.  Start the potatoes boiling.

Put the flour as near to the pan as you can...because you'll make a mess.

One potato per person, and two for the pot.  Unless you're in my family, then double that.

Turn after 8 minutes or so.

First turn.

Then turn again after another 8 minutes.  I usually turn mine so that they are on each side for a total of 12-15 minutes, give or take a few, depending on the thickness of the breast.  After the second turn, cut into the thickest part of the biggest one and check for doneness.

Second turn.

Done.  I put them on a paper towel on the plate to soak up any excess oil.

Drain off much of the oil from the pan, but use the rest of the drippings to make gravy.  Use milk instead of water for a creamier chicken gravy…mmmm…gravy…

In this instance I consider corn a vegetable.  Not a starch.  But let's be honest...

    I never used eggs… just flour. Interesting. I bet that makes a thicker crust. Mmmm… oily, chickeny crust…

    That’s one of my favorite meals too! All of it! Yummy! Tonight I’m having a roasted turkey breast, mashed potatoes, gravy of course, corn, bisquits & pudding in a cloud. Mmmmm….

    And I like different coatings for different things I fry. Chicken is cracker meal….zucchini- flour…shrimp-oops, you hate shrimp. But now it will be interesting to try flour on the chicken.

    I can only oven bake chicken…..it comes out the same, but if I try to fry it, it only turns a very bad color and sets off the smoke alarm. Brittney spent two days with my mom learning to fry chicken, and she does it amazingly, so she does all the frying now.

    I love that you combined super-fatty frying with lean & mean breasts. I sent the recipe immediately to Susana. So that when I learn to cut up a whole chicken (one of these days), I’ll make up some breasts and try it out! I recently discovered that there’s a cooking for engineers post on cutting up a whole chicken. That’s going to become my friend.

    My sister worked in a Chinese restaurant in college and learned how to cut up a whole chicken with a cleaver in ten seconds. (or so she claimed….)
