Grandma Hummel’s Lemon Pudding

It’s not really a pudding.  Foodies would have some fancier term for it, but I’m not a foodie.  Regardless, I LOVE this.  It’s a recipe from my childhood.  Something I remember my Grandma Hummel making for us when we visited as kids.  It’s so yummy.  You should try it.

Grandma Hummel’s Lemon Pudding

4 Tbsp. Butter - softened

1 1/2 cups sugar

Juice of two lemons

4 eggs - separated  You’ll need to beat the whites until they’re stiff, but that comes later.

zest from both lemons

4 Tbsp. flour

2 cups milk

Ingredients.  Really simple, yes?

 Preheat your oven to 325 degrees.  Cream butter and sugar together.  Add well beaten egg yolks, flour, lemon juice and zest.

Butter the baking dishes.  It's best to use ramekins/custard cups.  Brad tried to make one big batch once, and it didn't go so well. 

Separate the eggs.

Have a cute little red-haired girl juice your lemons.  If you're short on those, just do it yourself.

Once you have combined the first six ingredients, add the milk.  It will look something like this:

 Creamed butter and sugar.  Yolks, flour, juice, zest and milk.

Then beat the egg whites until they’re stiff.  It takes longer than you think.

 Tara was amazed that they turned white.  Thus the name egg whites.

Fold egg whites into the mixture.  Pour equal amounts into 12 little baking dishes.

Mostly evenly distributed. 

Here’s a VERY IMPORTANT STEP!!!  Pour water into the pan that holds the baking dishes before baking.

Into the oven! 

Bake at 325 degrees for 45 minutes.  Until the tops are a bit golden.  As they bake, a delicate “crust” will form on top.

A little bit of heaven….that’s what it is! Everyone should want a little bit of heaven! I’ll call it “Lemon Delight”! It’s indescribable and delectibly good! But, the above recipe MUST be precisely followed! Please share your results!

Mmmm….I’ve heard alot about Grandma Hummel’s lemon pudding…and now I get to try it! I love lemon desserts…I’ve recently made Lemon Blossoms…little mini cupcake type things with a lemon glaze.

I too have heard about this dessert for a while…must try it. It looks way different than I was imagining. I was picturing instant lemon pudding, which…eww. But obviously, if Grandma made it, it has to be good.

I have tasted the pudding - made both by Beth and Brad - and it is marvelous! Cake-y on the top, lemony on the bottom.

I think you should get up early tomorrow & go get the ingredients & get working on it! Have them all done by say around 11am.

Daniel really likes this, and it’s in my recipe book. I’ll have to look up the official name for the technique. It’s on the tip of my tongue… Although I think pudding is a perfect name for it. It’s just the cakey stuff on top that makes it a little different. Now I’m hungry!

I’m just now waiting for this to come out of the oven. Woo hoo! I always double the recipie. And when I’m making it for myself, I cook it in cereal bowls. And I eat two at a time.

I’m having lemon pudding for dinner! Heee!
