I do love strawberry shortcake. And I’m coming to realize that while I like strawberries, they are a fruit, and I’m far more a veggie person than a fruit person (mmm…artichokes…), but this is one way that I really like to eat strawberries. Dessert.
Strawberry Shortcake
1-2 pints strawberries – depending on how may people you’re feeding
sugar – probably about a half cup, give or take
4-8 shortcake cakes, or buy an angelfood cake – it works just fine and is often cheaper
1 tub whipped cream

Wash, destem and slice the strawberries. Slices are prettiest, but I usually just cut mine up however. Sprinkle sugar over the berries and stir until coated. I probably use a bit more than half cup. Do whatever looks right to you. If you’re serving it in a hurry, add a dash of water to create more juice. If you’ll be serving it later in the day or tomorrow, just allow the sugar to make the strawberries settle and make their own juice. (If you’re me, and prefer things room temperature, instead of cold, just let the berries stand on the counter for a couple hours. If you like the cold, refrigerate.)

Slice the angel food cake (or take the little shortcakes out of the wrapper, if that’s what you bought).

Cover with strawberries and a bit of juice.

Add whipped cream. Dessert is served.

I was thinking “Add ice cream” but I don’t think it would be as good as whipped cream in this case.
This was a good “last minute” dessert for my church dinner group. I used frozen strawberries in syrup. It wasn’t as fresh tasting, but it was still good. I have a tub of frozen strawberries in my freezer right now. Maybe I should get it out…
That looks delicious! You can’t go wrong with strawberries. Lloyd’s recipe would be, ‘Eat strawberries. Return cake to store for more strawberries.’
Hehe…that’s my theory too…with one exception…return strawberries, get more cake…I like strawberry syrup, but not the strawberries themselves.
But it does look YUMMY!!!!
