Beef Stroganoff.

It’s a poor man’s version, but we love it around here.

Beef Stroganoff

1-1.5 lb ground beef, browned

16 oz Sour Cream

1 can Cream of Mushroom soup

1 pint Half & Half (I use 1/2 to 2/3 the pint.)

1 small can sliced mushrooms (or pieces and stems, because they’re cheaper and taste the same)

Noodles (I usually use egg noodles, but only had rotini this time.  So, use whatever plain noodles you have.)

Ingredients.

Start water boiling for cooking noodles.  Brown the ground beef.  Put your noodles in the water.  Add soup and sour cream to the browned beef and mix well.  Add half & half to thin to a good cream consistency.  Drain and add mushrooms. Drain noodles. 

The whole meal only takes about 10 minutes to throw together...which is an added bonus.

Serve it all up.

Mmmm...

Yum.  And we also like lima beans.  In fact it’s a favorite vegetable/legume around here.

    “Poor man’s”? You’re using cream like the rich folks use!

    Looks delicious, except for the lima beans. I only eat those in front of preschoolers and pretend to like them.

    I like how much milkfat is in this recipe. Mmm… Do you supose there is a way to add some butter?
