Nacho Dip.

You know.  I haven’t posted a single thing other than recipes and kid pictures for a while…I’m going to work on that.  But not today.

This is one of Harold’s all time favorite foods.  Nacho Hamburger Dip.  Sometimes we have it for dinner even.  Because, why not?  It’s simple, it’s tasty, all is well.

Nacho Dip

1-2 lbs ground beef (browned)

1 block of Velveeta cheese.  The regular sized block.

1 can Cream of Mushroom soup

1 can Ro-Tel (that’s diced tomatoes and green chilies)

Corn chips

 Ingredients.

Brown the hamburger.  And while it’s browning, open the cans of soup and Ro-Tel, and cut the Velveeta into cubes.

In a big stock pot, combine all ingredients.  Cook over low heat until melted and smooth.  Or you can do it in a crock pot, but for whatever reason I never do, I just warm it on my stove top.  Maybe you love crock pots.  I apparently don’t.

Mmmmm...creamy, smooth nacho dippity goodness.

Serve with your favorite corn chips.  We like Tostitos White Bite-Size.  Man that was easy, wasn’t it?

    Easy–yes. But do you have anything quick, easy & delicious, that doesn’t have cheese…unless it’s mozzarella cheese?

    i’ve never seen the addition of soup! That’s a great idea – I bet it really helps to keep things from binding up!

    Yum! Nachos! I really like that recipe – well, mine’s just a little different… I use Mexican Velveeta instead of plain. And cheese soup instead of mushroom. But otherwise it’s exactly the same!

    There’s a dip like this at Red Robin on their appetizer menu. Order this, and some chicken fingers, and you’re full as anything. Mmmm…

    I have to thank you for all of these recipes Beth. You’ve given me some great ideas for meals. This seems to be the #1 question I ask my friends, “What are you having for dinner?” I know they think that is quirky but I hate getting in a rut!
