Asian Slaw.

Finally, Aunt Linda, I’m posting this recipe.

She’s been waiting for more than a month for me to post this…and I’m finally getting around to it.  December was full of so much more to post about, and I didn’t want to miss those moments.

You’ve probably had this at a church potluck dinner.  It’s the coleslaw with ramen noodles crunched up in it.  I really like it.  And I often take it to “bring a dish to share” things, because it’s easy, you don’t have to keep it hot, and it makes a lot. 

Asian Slaw

2 1lb. bags coleslaw/cut cabbage

1 bunch of green onions (diced – I use the whole bunch)

2 packages of ramen noodles (I use chicken flavor, the original recipe calls for oriental.)

Some sunflower nuts (The bag I buy will usually make 3 batches of this…I use, maybe, 1/2 cup?  Just dump some in.)

1/2 cup Oil

1/2 cup Rice vinegar (I’ve also used white vinegar and didn’t notice the difference.)

1/2 cup Sugar

Ingredients.  I forgot to take the picture before I emptied the bags...but at least I remembered before they were in the trash covered with slime, right?

In a great big bowl, dump the coleslaw mix, diced green onions and nuts.  Crunch up the ramen noodles before you take them out of the package, then remove the seasoning pack and set the noodles aside.  In a separate container combine EQUAL parts sugar, oil, vinegar (what that means is if you prefer less dressing, use 1/3 cup of each, or more, use 2/3 cup of each, you get the idea – I find a 1/2 cup of each is perfect for my tastes.) and the two seasoning packets from the ramen noodles.  Stir well – really well. 

Dumped together in a big bowl.

Equal parts.  More or less.

If you’re transporting this to a potluck or some such dinner, keep the noodles and dressing separate from the other stuff and combine upon arrival.  Like this:

The dressing is in that pink container.  It really does travel well.

If you’re just making it for dinner, combine right before serving.  Done.

Sorry I don’t have a picture of the finished product.  Last I made this we traveled to the Royuk Christmas, and I didn’t remember to take a pic.  But, you’ve probably seen it before…at the last church dinner you went to, or on a choir tour, or at the family cook out…

(As a side note, the HIGH temperature predicted here today is 7F.  Seriously.  7 degrees F.  Crazy.  And tomorrow, a balmy 8F.)

    As usual, your recipes make me hungry. Now I have to go to the store. For the record. we have no degrees right now. None, zip, zero. Why did I want to move back here again?? :-)

    Yum, I love making this salad. Mine’s just a little different in that I use broccoli slaw. And I also put in shredded almonds. And I only use oriental seasonings. And I don’t put in onions. And I make mine the night before so the dressing is soaked up by the noodles. But otherwise it’s exactly the same! ;)

    Our high today is supposed to be -1 with a low tonight of -10. Tomorrow we’ll hopefully to get all the way up to 4 but the wind is supposed to kick up and we’ll have a wind chill of -30. Brrr…

    It’s freeeeezing today. About half the adults didn’t make it to swimming, presumably because they couldn’t bring themselves to step into the frigid outdoors.

    What’s the temperature, you ask? 26 degrees F. We’re such wimps out here!

    I wish I could say Yummy! but … I do like noodles and are sunflower nuts the same as sunflower seeds. I like those. But I like them in their shell that are heavily salted. So you 1st suck on the shell til all the salt is off, then crack to get the seed. After about a 1/2 of bag, your tongue should be raw.

    Sunflower nuts are just the same as seeds, except without the shell.
    I like them the way you do…but the tongue getting raw thing always bums me out.

    Mmmmm. If I were rich, I’d make the peasants hold a potluck for me once a week, and then leave the leftovers.

    I love the word ‘slaw’. It’s almost as good as ‘swarm’.

    I like slaw and I like ramen noodles, but I don’t like them together. When I encounter this particular recipe, I pick out the noodles and just eat the slaw. Mmmm… sweet vinegar…

    It’s all about the gear, Kiwe. Gotta get good gear to handle 30 below wind chills. And you want to be sure your heater is working!
