First of all, Happy Baptism Birthday to ME!! Thank you Jesus – because heaven knows I couldn’t ever get there on my own. I’m much too sarcastic. And I like to make fun of people. And I like to cuss when I’m mad… *sigh*… yes, I just couldn’t get there on my own.
And now for the cause of that messy little Tim face. Lasagna. Serisously the easiest recipe for lasagna that I have ever found. There is no noodle boiling necessary. Easy.
Lasagna
1 lb ground beef
1 jar (1lb 10oz size) spaghetti sauce (I use Prego, traditional)
3 cups shredded mozzarella (more or less to taste, two cups is fine, so is four cups)
1 16 oz container cottage cheese
10 lasagna noodles (uncooked) (or 8, if that’s all you have)

Preheat oven to 375 degrees. Brown ground beef, add spaghetti sauce rinse the jar with a little water and pour that in, too. In a 9×13 baking dish/pan, layer half the beef/sauce mix, 5 noodles (four lenghth wise a little overlapping if necessary for your pan, one broken to fit the end), half the cottage cheese, half the mozzarella, then repeat the layers once more.
Cover with foil. Bake for 45 minutes (you can go longer, too, with no bad consequences…in case kids/life happens!). I like to remove the foil at about 40 minutes to let the cheese get a little brown and more bubbly. Take it out and let it sit a few minutes…or don’t, it’s HOT and runs all over if you cut it right away, but still tastes just great, if you let it sit (while you do some garlic cheese rolls under the broiler) it cuts better.

Simple, yummy recipe. Mine is similar. I love using cottage cheese instead of that really powerful and overly strong for kids ricotta cheese.

Those lasgna noodles remind me of when I had a “Survivor” theme for youth group once. For one of the eating challenges, I cut the ripply ends of the noodles with toenail clippers and told the blindfolded kids they were Mr. _______’s toenails & they had to eat 3. The boys team was able to do it, but the girls could not. Good times!
Now I have to ask, do you have leftovers? I have been cutting receipe in half so we don’t have left overs. This sure looks very very good.

I think ricotta cheese has a weird texture. Like cheesy sand.
When I was a kid my mom would always mix an egg into the cottage cheese. I used to when I first made lasagna, too, but I always wondered ‘why’? I don’t anymore, but what could the purpose be? To keep the cheese from running all over? Isn’t that the point? Boy, this is a long comment.
Added protein?

Daniel doesn’t like cottage cheese (which we usually mix with parmesan and some oregano, by the way, to spice things up). So he came up with the idea of using feta.

First, I leeched it (soaked it in water) for an hour to get some of the salt out. Then I mixed it with some egg, and maybe I put a little oregano. And then I did layers just like you. And made him his own little Daniel feta cheese lasagna.
I totally agree. I always make enough for at least two days. Plus lunches.
Good use for an old egg, hide it in a lasagna.
