Chip Chicken.
Sunday, July 20th, 2008I have a new recipe that has become a favorite in this house. Both for ease and for flavor. I don’t really enjoy cooking. It’s not that I’m no good and always burning stuff, just that I don’t really care to cook…and then clean up that big mess…so EASY recipes are something I’m all about.
For my 33.3 birthday party, Mom brought these tasty little chicken deals. Turns out it’s just chicken rolled in crushed potato chips (sour cream and onion, and I like to add a bit of salt because I love salt), and baked. Yum.

I buy chicken breast strips and cut them in half to make small pieces. Crush about 2/3 bag of Sour Cream and Onion chips (in a zip-loc with a rolling pin and my fist). Smash the chips onto the chicken bits with my fingers. If you just roll them, you won’t get nearly enough chips on the chicken. Bake at 350 for 25 minutes. Done. Yum.
(I serve them with rice, or mac and cheese, or we just eat them off the pan as we pass through the kitchen…whatever.)
