Chicken and Rice.
Curt told me he thought it would be a good idea to add a recipes category and throw posts in there for dinner ideas (for him, I’m guessing, but it makes a nice little deal for me, too). So, I did.
And last night we had Tara’s favorite dinner EVER. She even chooses this over pizza, and over macaroni and cheese. She LOVES chicken and rice, served with peas.
It’s about the easiest recipe ever, but it looks complicated. It also makes a great potluck item. In fact you have probably had it at a potluck dinner once or twice in your life. Here it is:
Ingredients:

1 box wild rice (I actually prefer Zatarain’s, but Uncle Ben’s is just as tasty), 1 can mushroom soup, 1 can mushrooms (I get pieces and stems, becasue I don’t care), and 1 can white chicken (get the big size, not the tuna-can-size).
Prepare the rice as directed on the box. Once done, I usually drain a bit of the excess liquid off - it’s less runny that way. I suppose you could add a bit less water to begin with also. Whatever.
Once rice is cooked, add chicken, mushroom soup, mushrooms. Stir it all up, and put it back over medium heat for a few minutes. Done.
(If you want to take it to a potluck, put the mixture in a baking dish, crush some ritz crackers over it, put it in the oven at 350 degrees for about 15 minutes. Done.)
Easy. Dinner is served.

Yup. And lima beans, and avacado, and cucumbers and carrots and…she’s a veggie girl.

I’ll have to use regular rice tho … try as I might, I can’t get used to Wild Rice. But Wild peas …. mmmmm ….mmmmm

“Enlarged to show texture” is what they write on cereal boxes all the time. Why would I want to see the texture of my cereal?!?
Your chicken and rice dish looks just wonderful, even when enlarged to show texture. I had peanuts for dinner tonight.

Also, I am pretty sure these ingredients have never been in my cabinets. I will have to try it though.
