Chip Chicken.

I have a new recipe that has become a favorite in this house.  Both for ease and for flavor.  I don’t really enjoy cooking.  It’s not that I’m no good and always burning stuff, just that I don’t really care to cook…and then clean up that big mess…so EASY recipes are something I’m all about.

For my 33.3 birthday party, Mom brought these tasty little chicken deals.  Turns out it’s just chicken rolled in crushed potato chips (sour cream and onion, and I like to add a bit of salt because I love salt), and baked.  Yum.

 Easy.  Tasty.  Not too messy.

I buy chicken breast strips and cut them in half to make small pieces.  Crush about 2/3 bag of Sour Cream and Onion chips (in a zip-loc with a rolling pin and my fist).  Smash the chips onto the chicken bits with my fingers.  If you just roll them, you won’t get nearly enough chips on the chicken.  Bake at 350 for 25 minutes.  Done.  Yum.

(I serve them with rice, or mac and cheese, or we just eat them off the pan as we pass through the kitchen…whatever.)

    You TOUCH the raw chicken? That would give Lauren the jibblies!

    I got to eat some of these July 4th (or was it the 3rd?). They were delicious!

    I have eaten these morsels and can vouch for their deliciousness!! I would actually touch raw chicken to make these. (And then bleach the heck out of my hands.)

    Do be careful with that bleach, though, Lauren. It can do some Damage to your fingers.

    Wow, that sounds supper easy and very good. Even I could make it. You should add a recipe category.

    Lauren, I know of a concoction that you may like to wash your hands. We used to use it to clean the milk house. It works much better than just bleach. Dip you hands in it once and you are done (of course you would need to wash it off right away or else…..) Warning: solution may cause sneezing, itchy and watery eyes, slight skin irritation or burning, burning of the eyes, shortness of breath, minor skin loss, nerve damage, loss of extremities, death.

    Boy, that sure sounds yummy! Thanks for sharing this recipe. I’m always on the lookout for new recipes. My friends know that I am always going to ask them what they are having for dinner that night-I like ideas! We will have this recipe next week-Yah!

    I remember fixing you cinnamon sugar on buttered bread when you were a tot! Have you made that for your wee ones yet??
    I usually stroll around the grocery store looking at what other people put into their carts and try and figure out how it all goes together!

    Yes I do-yummy! My kids make their own now and enjoy it for breakfast once in a while. (The idea of walking around the grocery store sounds like a fun one!)
